As you approach the hill, you lay into the throttle to gain as much momentum as you can, shift down a gear to get the RPMs up, and if you've got a pyrometer/EGT gauge, you're keeping a close eye on it. IF you don't, you're constantly glancing at your coolant temperature to see how quickly it's rising and if you need to make any changes. As it starts to creep up, you're just hoping that hill isn't as long as you remember it. Sure, you could pull over and let the truck cool down, but honestly, coolant can take an hour and you're just going to be rolling right back out onto the same grade that caused your temps to spike in the first place.
